How to make Ginger and Mint Lime


• 1 cup water
• 1 2 1/2 inch piece fresh ginger, peeled and thinly sliced (about 1/2 cup)
• 1/2 cup sugar
• 1/4 cup lime juice
• 4 sprigs fresh mint, torn into small pieces
• 1 cup lime sorbet or sherbet
• 2 – 3 cups club soda, chilled
